Simple Recipes using everyday Leftovers!

We all have leftovers at home.  The problem is, what do we do with them?  Most people don't enjoy eating them the same vigor that they did on day one.  So you need to get creative & jazz them up a little.  Make old new again!  Here is a list of some great, easy & simple recipes using leftovers as your main ingredients.  All of them take very little effort & taste great!

Fried Potato Patties
Leftover Ingredient
Mashed Potatoes
Other Ingredients
Grated Cheese
2 Tbsp of Oil for Frying

This is a super easy one with no measurements at all & a great one to get the kids participating in helping to make dinner.  

Take your leftover Mashed Potatoes warm them slightly.  About 20-30 seconds in the microwave should suffice. Take a small handful of Mashed Potatoes in your hand & make it into a ball.  
Flatten the ball slightly, in your hand, put some of your grated cheese in the middle, (as much or as little as you like)
Wrap the potato up around the cheese & flatten into a patty shape.  
Warm a non stick frying pan with 2 tbsp of Oil & add the patties.  
Fry until golden brown.
Soup (Chicken/Turkey/Beef)
Leftover Ingredients

Meat (this can be done with any meat, Chicken, Turkey or Beef )
Vegetables (again, this can be done with any leftover vegetables that you have on hand)
Other Ingredients
Water
Pasta or Rice
Pearl or Pot Barley
Any other vegetable(s) of your choice
Any Legumes of your choice (Split peas, Yellow Peas, Kidney Beans etc...)
Your Favourite Seasonings

The great thing about Soup is that literally ANY food can go into it.  When I was a kid we used to have Soup or Stew made with the leftovers from the week.  It's a excellent way to use up all your leftovers as well as get all your vegetables in one easy dish.  Not to mention this is a hugely comforting & warming dish in the col winter months.  

Fill a large Soup Pot 3/4 full with Water & put on the stove to boil.  
Start prepping your meat by taking the meat off of the bone if there is any, removing the skin & cutting the meat into bite size pieces.  Add this to your pot.  Don't worry if the water hasn't boiled yet, you want the water to absorb the flavours of all the ingredients as you go.  
Next if you have large size vegetables, cut them also into bite size pieces & add to the pot.  If you have small vegetables like peas, corn etc... just throw it in the way it is.  
If you are using any additional Meats or Vegetables (besides your leftovers), add them now too.  
If you are using Barley, add it at this point.  
If you would like to use any Legumes add them now as well.  
Add to the water any of your favourite seasonings.  I like to add some Roasted Red Pepper & Garlic by Clubhouse, a pinch of Garlic Salt, some fresh Cracked Black Pepper, as well as some Smoked Paprika.  You may also wish to add some stock of your choice as well.  
Allow this to come to a boil & then simmer until you nearly reach your desired thickness.  If you are adding Rice or Pasta, now is the time to do so.  
Once your Rice or Pasta is cooked, your Soup is ready.  
This is best served with a warm, crusty loaf of French Bread.
